Somen Salad Recipe
Ingredients:
2 Bundles somen
noodles
1/2 head lettuce,
shredded
Your choice of
meat, sliced fine
Cucumber, julienned
Carrots, juilenned
Eggs, fried into
thin pancake style and thin sliced
Green Onions,
minced
Sesame seeds,
toasted
Dressing:
1 to 2 tsb sugar
3 tsb rice vinegar
1 tsb. salt
1/4 cup vegetable
oil
2 tsb soy sauce
dash sesame oil
Boil noodles 2 to 3 minutes (or according to pack directions),
drain, rinse in cold water, drain.
Add vegetables, meat, fish, egg, green onions and sesame seeds to somen/lettuce.
Prepare dressing and pour over salad before serving.
